The Records of the Potato Administrative Committee, Area III consists of documents dated 1959-1980, with the bulk falling from 1978-1980. The collection contains papers reflecting committee business, potato promotion and marketing, including photographs and applications for a potato display contest. There are also a number of photographs showing potato processing, most credited to the Union Pacific Railroad.
