Abstract

John S. "Jack" Avens, Ph.D., a professor in CSU's Department of Food Science and Human Nutrition, was instrumental in the creation of the Fermentation Science and Technology (FST) degree program. His research focuses on applied microbiology as it relates to food, animal production, public health, and fermentation. This collection consists of materials from the FTEC 460 course, Brewing Science and Technology, including beer-related news clippings, weekly class newsletters, and posters and memorabilia related to each semester's unique class brew project.
